How to Order Oysters at Restaurants (and Actually Know What You’re Doing)

Nobody needs an excuse to order a dozen oysters. But that moment when you get the menu at an oyster bar and stare down a list of 30 different types can be intimidating at best. What’s the difference between a Kumamoto oyster or one from Wellfleet? Will it be crisp, crunchy, and salty or milky, full, and creamy? Large or small?
