Despite their instance on gracing our Thanksgiving Day tables, green beans are actually in season in the height of summer. They’re crisp and crunchy, tasty raw, excellent stir-fried or sautéed, delicious steamed, and great grilled. Consider them one of summer’s most versatile veggies.

HOW TO BUY
Avoid beans that are overly large, wide, or thick—they are overly mature and will taste bitter with a mealy texture. A few superficial brown spots on the beans’ skin are nothing to worry about, but pass on beans that have lacerations, cuts, or gashes.
