A member of the brassica family, cauliflower is one of late summer and early fall’s most versatile vegetables. Slice it thick and grill it like steak, roast it whole, or boil and purée it for a mash that will make you (almost) forget all about potatoes.

Look for compact heads with leaves that reach partially up the vegetable. Cauliflower is available in a variety of colors, from white to purple to an orange variety known as “Cheddar.” Slight discoloration or spotting on the head is completely normal, but avoid any that are totally black in places.
