Fresh lettuce is one of the most exciting market finds in late spring. From juicy iceberg to crunchy romaine to tender butter, bibb, and little gem, it’s all good, and it’s all salad-friendly.

HOW TO BUY
Look for greens that have been properly stored (in refrigeration, and not underneath heavier items). Avoid any that have yellowed or turned mushy. If buying whole heads of lettuce, look for tight, pert leaves and no signs of wilting.
