Endive, frisée, radicchio, escarole… there are many varieties of chicory, which are leafy greens that look similar to lettuce, but have a much more bitter flavor. Unlike lettuce, which reaches its prime in summer, chicory really gets cranking in the fall. The heads of chicory mature best in cool conditions. Not sure if you’re buying lettuce or chicory?
