One of our new favorite go-to fall soups is this bright but hearty green posole filled with hominy. Its plump, chewy kernels and deep, earthy-nutty flavor make hominy irresistible. So what is it, exactly?

Hominy is maize that’s been dried, then soaked in an alkaline solution to remove the hull and germ, causing the kernels to swell in the process.
