According to Knouse Foods’ proprietary research of 300-plus foodservice operators, apple sauce is viewed as a versatile ingredient that enhances texture and improves nutritionals in a variety of dishes. While apple sauce is commonly used as a snack or side dish, operators agreed that an additional top benefit is that it’s a great way to add moisture to recipes. The study also reveals that apple sauce users substitute it for oil, sugar and butter.
