Okay, so a lot of people like meat. But chefs Chris Cosentino (Cockscomb in San Francisco) and Chris Shepherd (Underbelly in Houston) really like meat. The two join host and editor in chief Adam Rapoport in Portland, Oregon (yep! we took the ‘cast on the road during Feast Portland) to talk about cooking meat in 2015 and what exactly that means these days.

Don’t expect to find any boneless skinless chicken breasts or boring steaks on their menus. Instead, expect various cuts of goat meat or even cow udder. They were both all about nose-to-tail eating before it was cool.…
