David Kinch is, to put a point on it, a chef’s chef. The proprietor of Manresa, a three-Michelin-star restaurant in Los Gatos, California, doesn’t do splashy car endorsement deals or have grand plans to open Manresa satellites in Vegas, Monaco, and Macau.
